With it being summer usually means more time with your kids. A great way to spend it together is making dinner together. It may not always be easy with toddlers, but it is a great opportunity to teach your kids skills and make lasting memories. These weeks recipe round-up is fun and as always gluten-free. Every Friday, we will share our weekly recipe round-up of great gluten free and paleo recipes for you and your family. Beef and Potato Empanadas 

Have you ever had the opportunity to enjoy authentic empanadas? Valerie, of One Happy Housewife, has shared her tasty “Beef and Potato Empanadas” recipe and it is a winner. This dish is rated at an intermediate level but will only take you approximately one hour to make. The dough will need to be substituted by your favorite gluten-free brand or recipe. Tuna Spring Rolls

Here is a meal that will work for any family member who likes Tuna. Sandi, of Fearless Dining, shared her “Tuna Spring Rolls” recipe. These spring rolls are so easily manipulated and are great to bring the kids in to make. You do need to cook the rice noodles beforehand so they can cool before making the spring rolls. Once that is done the dish takes approximately 10 minutes to make.

Roasted Fig and Brie Salad with Crispy Prosciutto Grapes Tarragon

Emma, of Emma Eats and Explores, has shared an amazing “Roasted Fig and Brie Salad with Crispy Prosciutto Grapes Tarragon” recipe. Just looking at the picture will have your mouth watering. The combination of fruit, cheese, and vegetables gives the salad a full-flavor that you will not want to end. It is a great meal for days that you do not have a lot of time but still want a homemade meal. 

Gluten-Free Stuffing

Stuffing is not just for Thanksgiving and there is no reason to wait to enjoy it. Stefani, of Natural Paleo Family, shared her tasty “Gluten-Free Stuffing” recipe. Yes, you read that right, it is gluten-free. This dish takes approximately 30 minutes or less. She also adds directions to dry out your own bread for the stuffing. So, after a long week, a nice plate full of your favorite meat, vegetables, and stuffing should help bring the comfort back into your life.

One of the many great ways to spend quality time with your children is fishing and it also can provide a meal. Ray, of Dads in the House, shared his delicious cutthroat recipe. Once the cedar sheets have been soaked and the grill is hot the fish itself takes between 10 to 12 minutes depending on the size. The combination of the lemon, butter, and bacon on the freshwater fish will have the entire family wanting seconds or thirds. This dish goes well with salad, vegetables, and any of your favorite gluten-free side dishes.
