When most people think of Louisiana, they think New Orleans, Bourbon Street, or that really hot conference they attend in the middle of August. These are not my memories.

As a kid, I spent a number of years traveling back and forth I-10, from Texas to Louisiana. We would have family get togethers either in our family home or over at one of my aunt’s homes. These houses were in the country. I’m talking long driveways and Nutria.

The beauty of this deep southern style of living was, first the imagination of a child can grow so much when they can safely roam for acres and explore the many wonders of the outdoors. Second, our family would make amazing food. Farm fresh duck eggs, chicken etouffee, and gumbo.

As with a good comedy act, I want this week’s gluten free recipe roundup to come full circle from our opening theme.
