Gluten free recipes are becoming more popular every day because more people are finding their bodies don’t like gluten. These recipes might look a bit intimidating if you have never cooked this way but are not nearly as hard of a switch as you might believe. Once you replace all the gluten in your home (such as your flour and store-bought bread) with gluten free alternatives, it will honestly be just like following any other recipe.

One of the parenting struggles of being a busy mom or dad is trying to plan meals for breakfast, lunch, and dinner. Every Friday, we will share our weekly recipe round-up of great gluten free and paleo recipes for you and your family. Our hope is that this is helpful in deciding what you want to make for dinner and makes meal planning a little easier for you.

Here are this week’s four fantastic favorite recipes:

Instant Pot Tomato Soup

Tomato soup for many of us brings back childhood memories. I remember being a small child thinking that tomato soup meant we were living like kings. Now as an adult, I know it does not mean we are living like kings but it is incredibly tasty and a big win with many kids. You can find an extremely easy and fast recipe for tomato soup at the One Happy Housewife blog. Her  “Instant Pot Tomato Soup” is very good. A few items will need to be carefully picked such as the chicken stock and tomato paste. It is better to be safe than sorry, so please remember to read every label to make sure there is no gluten until you are very familiar with your favorite gluten free products.

Baked Camembert with Garlic and Rosemary

Not every dinner has to be a giant meal. I personally have many days where all I need is a small dinner and this “Baked Camembert with Garlic and Rosemary” recipe is perfect. The recipe takes roughly 25 minutes and is not difficult. While the cheese bakes you will have time to prepare whatever you are eating it with whether it be vegetables, gluten free crackers, or gluten free crusty bread. This is a crowd pleaser and can be a great appetizer or small meal.

Gluten Free Chicken Pot Pie

We all have those favorite meals we grew up on but now our bodies hate. Here is a great alternative for one of those delicious meals, Fearless Dining’s “Gluten Free Chicken Pot Pie”. It is great for those cooler days and a family favorite. This dish takes a little less than an hour and is not extremely challenging to make. Depending on what your family’s preference is you can add as many vegetables as you would like into the pot pie mix. This recipe is just as good if not better than the regular chicken pot pies that you may have had as a kid.

Portobello Stuffed Acorn Squash

Natural Paleo Family is a great blog for those who are battling illnesses that cause them to be on a healing diet. A large portion of the content on this blog is about how, Stefani, the blogger, lives with her own illnesses and prepares healing food. Whether you are trying to find healing food or just good healthy meals, you should try her delicious and nutritious recipe for “Portobello Stuffed Acorn Squash”. Now, how amazing does that sound? Squash is a great substitute for many not so healthy items, just as filling, and better tasting than the alternative. This recipe takes less than an hour to make and is fairly easy as well.
