Whether your gluten-free lifestyle just began or you have been living it for years it is easy to get stuck with the same few dinners every week. With a busy week can make it incredibly difficult to make a dinner every evening. Meal prepping has been the saving grace to many homes. Many of the meals we share are freezer friendly so you can use a down day to prepare meals. Many of the other meals we choose are quick and easy to make.

One of the parenting struggles of being a busy mom or dad is trying to plan meals for breakfast, lunch, and dinner. Every Friday, we will share our weekly recipe round-up of great gluten free and paleo recipes for you and your family. Our hope is that this is helpful in deciding what you want to make for dinner and makes meal planning a little easier for you.

Here are this weeks five fantastic favorite recipes:

Quick and Easy Texas Chili Beans

Beans or no beans, what do you prefer? Chili is one of those recipes that has and will be argued over for decades. Valerie, of One Happy Housewife, has shared her “Quick and Easy Texas Chili Bean” recipe. This is a beginner recipe and takes approximately 45 minutes to create. To make it a gluten-free meal you will have to substitute the flour for a gluten-free flour blend. Go to her post where she shares many tips and tricks that can affect the way the chili comes out.

Slow Roasted Beef Brisket

Is it very rare to have a night to yourself but when you do it is nice to just relax. Emma, of Emma Eats and Explores, shared her meal of choice for a relaxing night, “ Slow Roasted Beef Brisket”.  This dish can be made in the oven for four hours or in the slow cooker for six to eight hours and it takes approximately two to three servings. The brisket comes out so incredibly tender that you will not even need a knife.

Easy One Pan Gluten-Free Chicken Piccata

Who does not love one pan meals? Sandi, of Fearless Dining, posted her “Easy One Pan Gluten-Free Chicken Piccata” recipe. This recipe takes approximately 15 minutes to cook and 10 minutes to prepare. Sautee the chicken in white wine, lemon juice, and capers giving the meal a very distinct and delicious taste.  To add to the meal top the plate with some parmesan cheese.

Crockpot Pineapple Chili Chicken 

Stefani, of Natural Paleo Family, shared her delicious “Crockpot Pineapple Chili Chicken” recipe. This meal takes approximately six to eight hours to cook in the crockpot. She suggests serving this meal over rice or quinoa. Do not forget to use your Kitchen Aid Mixer to shred your chicken because it makes it incredibly easier and faster. After you shred the chicken add your choice frozen vegetables and let everything cook for another hour to really soak in the flavor.
