Summer vacation is coming to an end for some students which means doing those last few things on the list and then prepare for the next school year. This week we found simple gluten-free meals that will not have you standing in the kitchen for hours prepping and cooking. There is a mixture of meats, vegetables, flavors, and more.

One of the parenting struggles of being a busy mom or dad is trying to plan meals for breakfast, lunch, and dinner. Every Friday, we will share our weekly recipe round-up of great gluten free and paleo recipes for you and your family. Our hope is that this is helpful in deciding what you want to make for dinner and makes meal planning a little easier for you.

Feta, Raspberry, Apricot, and Shaved Fennel Salad

Here is a salad that will knock you off your feet. Sandi, of Fearless Dining, has shared her “Feta, Raspberry, Apricot, and Shaved Fennel Salad” recipe. If you regularly follow her you probably have seen how she likes to experiment (successfully) with new vegetables and combinations. This salad is easy, simple, and taste amazingly refreshing. It is great for nights you are wanting a nice lite meal.

 

Lime and Paprika Chicken Fillet

Emma, of Emma Eats and Explores, shared her tasty “Lime and Paprika Chicken Fillets” recipe. This meal is an overall pretty easy meal to make and like many chicken dinners, the side dishes that can compliment this is endless. The lime and paprika together will have your guest wanting the recipe. She even mentions trying the marinade for chicken fajitas which may inspire you to delicious leftovers.

Instant Pot Lemon Butter Broccoli

Don’t forget about a super tasty but simple side dish. Valerie, of One Happy Housewife, shares an absolutely perfect recipe for “Instant Pot Lemon Butter Broccoli”. This dish takes roughly 15 minutes to prepare from start to dish. There are five listed ingredients including the head of broccoli. Broccoli is making a comeback with kids, start them early before it becomes the enemy.

Simple Paleo Soup

Are you a soup lover? Stefanie, of Natural Paleo Family, shared her nutritious and delicious, “Simple Paleo Soup” recipe. This soup is perfect because it’s so incredibly simple and easy to manipulate. She has a list of ingredients but you can use your favorite meat, starchy vegetable, and more. The bone broth that is used in this soup is full of vitamins that can help heal and protect the body.
