Gluten free waffles are a great way to start any breakfast. I have always loved the taste of waffles. I love them so much that I enjoy them plain with no syrup. Because of my love for breakfast, I used to feel sad that there were foods that I would have to give up due to my gluten free lifestyle. I hope that my gluten free waffles help you enjoy living a gluten free life without feeling that you are missing out on good, real food.
Ingredients
3 eggs
½ cup of coconut milk
1 cup of almond flour
¼ cup of coconut flour
2 tablespoons of honey
1 tablespoon of maple syrup
2 tablespoons of melted grass-fed butter
1 tablespoon of orange zest
1 teaspoon of baking soda
1 teaspoon of baking powder
½ teaspoon of salt
Instructions
- Turn on your waffle iron. Please set per your manufacturer’s instructions.
- Take a large bowl and whisk together eggs until fluffy.
- Blend in yogurt, milk, honey, maple syrup, and orange zest.
- In a medium bowl, combine the salt, baking powder, baking soda, and flours.
- Slowly add flour mixture into egg/yogurt/milk mixture.
- Add in melted butter.
- Mix all ingredients until batter is smooth.
- Use a ¼ cup ladle or ½ cup measuring cup to pour waffle batter on your waffle iron.
- Pour evenly to cover surface, but do not over pour.
- Bake until crisp and slightly brown. Enjoy with your favorite toppings.
