Keeping dinner different every night is extremely challenging, especially if you have picky eaters or dietary restrictions such as living gluten free. There are a few resources like Pinterest that are great for ideas, however, many exhausted parents have no idea where to start.

One of the parenting struggles of being a busy mom or dad is trying to plan meals for breakfast, lunch, and dinner. Every Friday, we will share our weekly recipe round-up of great gluten free and paleo recipes for you and your family. Our hope is that this is helpful in deciding what you want to make for dinner and makes meal planning a little easier for you.

Here are this week’s four fantastic favorite recipes:

Instant Pot Chicken Tacos

Valerie, of One Happy Housewife, has a delicious “Instant Pot Chicken Tacos” recipe. It is great for beginners and only takes 20 minutes to create. The chicken is so full of flavor from the salsa, pico de gallo, and chili powder, you barely need toppings. The recipe can be easily adjusted to the amount of heat or no heat your family prefers. Everyone at the table will be happy with these Chicken Tacos. It is a great meal for families with picky eaters.

 

Pork Chop with Butter Poached Apples

Emma, of Emma Eats and Explores, takes the pork with applesauce idea to a whole new culinary level. Her “Pork Chops with Butter Poached Apples” are delicious. The meal is fairly easy to make and takes approximately 35 minutes. The combination of the pork and the apples creates a magnificent sweet and savory taste. Even though this recipe is not the typical picky eater’s favorite, the butter poached apples may come in handy if your child is someone who won’t eat something because “it looks funny”, “it looks gross”, or my favorite “it’s [insert color], I don’t like [insert color] food”. This meal is a great way to help your little ones eat a balanced meal.

Gluten Free Stir Fry Beef and Broccoli

Sandi, of Fearless Dining, did not give up Chinese food just because she is living a glutenfree life. She made a “Gluten Free Stir Fry Beef and Broccoli” recipe that is better than the real stuff. The meal only takes about 25 minutes and it is great for the whole family. This meal is lower in sodium than most Stir Fry meals and is only 300 calories per serving which is very low for dinner. This meal for my family would be perfect after a hard day.

Roasted Asparagus and Feta Quinoa Salad

It seems this summer is extra hot and here on the East Coast extremely humid due to the massive amount of rain. There are many days a heavy dinner is not appetizing at all which is why Vivian Carpenter’s (guest blogger for Natural Paleo Family) recipe for “Roasted Asparagus and Feta Quinoa Salad” is perfect.  This meal will take around 45 minutes to make but is very easy. The quinoa takes about 20 minutes to cook and the asparagus needs to be roasted for about 15 minutes. This salad is very good and will leave you perfectly satisfied.
