Every once in a while we all need an easy week. The best way to start that is with your diet. Finding gluten-free comfort food can make your overwhelming day feel not so bad. Who does not love to sit down and devour a delicious meal and then relax before bed? We should you give that up just because you have diet restrictions?

One of the parenting struggles of being a busy mom or dad is trying to plan meals for breakfast, lunch, and dinner. Every Friday, we will share our weekly recipe round-up of great gluten free and paleo recipes for you and your family. Our hope is that this is helpful in deciding what you want to make for dinner and makes meal planning a little easier for you.

Here are this weeks five fantastic favorite recipes:

 

Instant Pot Chicken and Dumplings

Valerie, of One Happy Housewife, shared her “Instant Pot Chicken and Dumplings” and a very touching story to go with. Valerie’s Chicken and Dumplings recipe is inspired by her passed mother-in-law who made the best Chicken and Dumplings. This is an easy meal to make and takes an approximate total of 45 minutes to fully create. To make it gluten-free the biscuits, chicken stock, cream of chicken, and bouillon cubes have to be carefully picked or replaced, hence a lot of brands do use ingredients such as wheat or rye. Once finished it will be completely worth it because chicken and dumplings only get better for lunch the next day.

New England Fish Chowder

Sandi, of Fearless Dining, has shared her gluten-free recipe of, “New England Fish Chowder”. It is a must try. Like most her meals it does not take hours, but it will have you feeling the warm comfort for hours. It will take approximately 15 minutes to prepare and 30 minutes to cook. You can even try switching out the cod for another type of fish. She also suggests using sweet potatoes instead of regular for a fun change of taste.

Chicken and Chorizo Stew with Rioja, Spanish Style

Here is a recipe that has a great mix of ingredients for amazing tasty results. Emma, of Emma Eats and Explores, shared her delicious “Chicken and Chorizo Stew with Rioja, Spanish Style” recipe. The chicken thighs and the chorizo mixed and cooked together creates a flavourful meal. Then add the peppers, onion, garlic, and fresh spinach you will have to go for seconds. This dish takes approximately 30 minutes to prepare and two hours to cook.

Hearty Crockpot Chili

There are probably thousands of different chili recipes and probably thousands that are really good. Stefanie, of Natural Paleo Family, has shared one of those really good chili recipes. She calls it her, “Hearty Crockpot Chili”. Yes, the best part is in the name, crockpot. We all need at least one crockpot comfort meal under our hat. This meal takes approximately 15 minutes to prepare and four hours to cook in the crockpot.
