Cooking gluten-free doesn’t have to be a struggle. More and more families are enjoying the gluten-free lifestyle because there is nothing holding them back anymore. There is an alternative to everything now. You literally will not have to miss anything ever again. It is just a bit of a learning curve but keeping up to date is great for your brain.

One of the parenting struggles of being a busy mom or dad is trying to plan meals for breakfast, lunch, and dinner. Every Friday, we will share our weekly recipe round-up of great gluten free and paleo recipes for you and your family. Crockpot Rotisserie Chicken

You cannot go wrong with rotisserie chicken, ever. Stefanie, of Natural Paleo Family, has shared her amazing “Crockpot Rotisserie Chicken” recipe. It is one of those meals that even the pickiest eater will not refuse. The chicken takes between four to six hours and can be checked for doneness with a meat thermometer. The bonus is you can use the bones for her delicious and nutritious bone broth.

Sweet and Spicy Barbecue Grilled Pork Ribs

Sandi, of Fearless Dining, has shared her “Sweet and Spicy Barbecue Grilled Pork Ribs” recipe. This dish is so delicious. The meat just falls off the bone and the homemade seasoning mix gives the ribs an unforgettable taste. These ribs can be cooked in three different methods; oven to grill, grilled all the way and using a smoker. All three ways will bring you great results but take different amounts of time.

Corn Souffle 

Valerie, of One Happy Housewife, has a way of making incredible dishes in a minimum amount of time. She has done it again with her “Corn Souffle” recipe. The ingredient list is fairly safe to follow but double check all labels for gluten. For the baking powder, we recommend Bob’s Red Mill Baking Powder. This entire line of products is dairy and gluten-free as well as great for baking in general. This dish goes well with many main dishes and is fairly easy to make.

Prosciutto Wrapped Jumbo Shrimp Salad with Mango Salsa

Here is a great summer recipe from Emma Eats and Explores. She shared this great yellow cherry tomato inspired recipe with easy to follow directions. This dish is a quick and light dinner to make. It is great after a long day by the pool. Adding the prosciutto and shrimp makes the salad more filling. The combination of ingredients leaves a delicious sweet summery taste with a touch of heat.
